For me, probably the most challenging recipe book (so far) was the one on macarons; I was even afraid to start it 😅. But it turned out that there was nothing difficult about it at all. Everything was explained so well that I didn't even have any questions. The macarons on all types of meringue turned out perfectly the first time.
I finally learned how to smooth the tops well (it took me six months of practice 😅), and pastry-making in general teaches you resilience to stress. There are various situations: sometimes the cream doesn't set well, sometimes the decoration falls off, sometimes the sponge doesn't rise properly. After such things happen three times, you just don't get nervous anymore and quietly redo everything. New clients are appearing, and there are more and more of them. It's very pleasant when people say they haven't tasted anything better, even though they ordered from different pastry chefs before 🤭.
I still have a long way to go to reach my main goal and dream of opening my own workshop and bakery. Pastry-making is my soul, and I can't imagine myself without it anymore.
To beginners, I wish you never give up and don't lose heart. There will be many obstacles along the way

I liked the book 👩‍🎓 everything was accessible. I love to cook, so the macaron dessert was very intimidating and confusing for me, but I wanted to learn how to make them for my loved ones. Now I have the experience, and at my main job, I have regular clients. I really want to develop further in this direction and get even better ☺️. What I would recommend to beginners is probably not to give up because it is a very temperamental dessert with many nuances. But once you master it, it's pure delight 😋.

I am very satisfied with the book 😍. Until I bought this book and made macarons myself, I didn't understand why this dessert could be so appealing)). But after that, I made macarons with passion fruit and white chocolate, blue cheese with walnuts, strawberries and cream, Snickers, salted caramel, and raspberry rose. It's just amazing, such a harmonious combination of flavors.
I am very grateful to Elena and the ARDO Academy for such detailed recipes. My macarons always turn out perfect the first time with albumin. I am also very thankful for the recipe with reduced sugar content for French meringue ❤️. The ones with Italian meringue are also delicious, but the tops don't always rise as high.
So, I continue to improve my macaron-making skills, but even at this stage, I have received great feedback because I made different kinds of macarons for a charity fair

I really enjoyed the macaron book! Everything is explained and shown very clearly. The recipes are delicious. My friends and family loved my macarons. In Ukraine, I studied to be a teacher and then an economist. I worked in the banking sector. I have two children and started baking while on maternity leave. I really fell in love with it. When I went to Poland in 2021, I started working as an assistant pastry chef at a company. I am a self-taught pastry chef, and your book was my first course in pastry-making.
